Gone are the days of cooking my favorite comfort food staples like, creamy squash soup, beef stew and chili now that spring has rolled around. The cool airiness of the season always seems to compel me to want to eat light and make things that require very little cooking. This salad is made with fruits and vegetables I picked up at thefarmers market. The mixture ends up being like a party in your mouth – hitting each one of the five senses a bite at a time. Not only is this salad colorful but surprisingly, it’s quick to make, it’s very filling and most importantly, it’s figure friendly. It’s a win win no matter how you look at it. And it’s one of those recipes that you can make your own by using your favorite fruit and vegetables. Here’s how I made mine.
Ingredients {Makes 4-6 servings}
1 small watermelon cubed
2 cucumbers cubed
Small bundle of fresh basil chopped
3 sour apples cubed
Drizzle of extra virgin olive oil (optional)
Pinch of salt
Pinch of cayenne pepper or jalapeno pepper chopped (your choice)
Crumbled feta cheese
Directions
In a large bowl add your cubed fruits and vegetable, sprinkle with salt, cayenne pepper, olive oil; using a large spoon toss all ingredients together to combine well. Sprinkle top with crumbled feta cheese and serve. Enjoy with your favorite glass of red wine. I had mine with Pinot Noir.
