Kale Smoothie

Okay, don’t be turned off by the title yet. Trust me, it’s not as bad as it sounds. I love a healthy shake for breakfast especially in the summer months, and I switch it to lunch in the winter months. This delicious smoothie is healthy, fills you up like a meal and is quick to make!

The kale smoothie can be your change of pace from gorging on all of the comfort food that tends to be all around us during the Fall and Winter months. When you make that new year’s resolution in 2013 to lose weight because of all the good eating that has been ingested, this drink will help you shed a few pounds really fast.

Ingredients {makes 2 servings}:

1/4 cup almonds {soaked in water overnight}

1 banana

1/4 cup yogurt of your choice

1/8 tsp fresh ginger

1 cup kale leaves {or a handful… you can also substitute other greens that you like}

1 tbsp Hulled Hemp

1 tbsp flax seed oil

1 cup water {or you can use coconut milk which made it delicious with the almonds;}

Directions

Drain your almonds and blend all ingredients together until smooth.

TIP: I peel a hunk of ginger, then freeze it, which makes it easier to grate in drinks and cooking – not to mention it lasts for months that way.
